The bilberry plant, a low-growing shrub native to Northern Europe – which can be also found in North America and Asia – starting from the Middle Age has a long history in human diet and its preparations.
Bilberry fruit presents many phenolic compounds, giving the plant the typical color and high antioxidant content. Anthocyanins are considered the main bioactive involved in the numerous health benefits.

Despite its common use as a delicacy, the main indication is for improving night vision. British Royal Air Force pilots, during the World War II, usually ate bilberry in order to enhance their visual acuity before night exits.

Among its other healthy benefits, lowering vascular permeability and capillary fragility are well-known effects, thanks to many human and in vitro studies as well as animal models.
